What would cause these problems with my car?

my service engine light comes on sometimes which causes my car to get really loud and not shift right. It also smells like something is burning but all my gauges and fluids are fine. As soon as I fill my gas tank up the light goes off and my cars fine again.

The Engine Computer is turning on the Check Engine light because it detected a problem. It has also set a diagnostic fault code in memory. Many auto parts stores will read those codes for you for free. That will get you into the circuit or system that needs to be diagnosed.
