the light on the drivers side flashes on when fluid is at certain levels

I have a 1999 volkswagon jetta 2.0 wolfsburg edition i changed out the coolant about 2 weeks ago and keep having to put water in periodically .

Maybe so it just seems like it was full everytime i would put more water in and the car it seemed to disappear somewhere its doing fine now

You had an air pocket that bled itself out into the coolant reservoir bottle... air makes its way into the bottle, and the fluid level drops.
