Hi I have just bought a polo and there was no stereo in the car but I am wanting to fit my own so I pulled out the wires to fit and there was no loim or harness !!! How would I fix this myself ??

Just run your own wires. There will be openings around the car where factory speakers would have been mounted. Mount the speakers and run wires between them and the new radio. The power wires connect to other wires under the dash, or there might be places to attach them in the fuse box. Attach the ground wire to an existing bolt on a metal part of the dash that is bolted to the body sheet metal.
