1997 Chevrolet S-10 starting and dying problem

I have had this ongoing problem with my truck randomly dying and different speeds I have replaced many things trying to figure it out last things were idle air control valve and the positioning sensor. Now when I am driving it still cuts off but not as much and I have had problems starting some times. When I turn the key on I have to wait until the lights on the dash come on the radio and air will work right away but the dashboard lights take almost a full min to come on. Then it will start no problem I am guessing its some sort of sensor or relay or switch I am not sure but right now I think its one of those electrical things. I just don't know electrical very well.

Scan for codes and check fuel pressure with a gauge first

Scanned picked up nothing and the fuel pressure read around 63

Try resetting your antitheft otherwise have a local guy scan it with a pro scanner see if he can pick up anything on that instead of an autoparts one.
