I need to replace the original power steering pump with an electric 12V pump, or something. What pressure does the OEM pump supply?

Never heard of an electric-driven power steering pump. A similar pump runs the hydraulics on snow plows, and those use a very high-powered motor similar to a starter motor. Those can draw over 200 amps but very intermittently. To run it continuously you'll need a generator that can produce two and a half times the current your present one produces.
The typical pump can produce over 1100 pounds of pressure.
