The temperature gauge has always stayed mid-line (between hot and cold). The last couple of days I have noticed that periodically while driving on the highway the gauge drops below the cold mark and stays there until I reach the city and then it runs normal.

Heater still produces heat and to date no overheating or other issues. Does this sound like a thermostat problem?

Yes, it is possible the thermostat is stuck in the open position. Before you replace the thermostat, check and ensure the sending unit wire is clean and secure.
