Whenever I accelarate, the pedal does not seem to have an infuence on the revs. If I push it down deep, it shifts down and then accelarates again.

Whenever I drive down a hill and break, it shifts down causing it to give a shock.

I recently changed the oil and refilled the ATF. Could overfilling be the problem?

This all sounds normal to me. When pressing the accelerator pedal all the way, it causes the transmission to shift into overdrive or passing gear, which causes the engine to speed up.

If you suspect that you overfilled the transmission, check it.
