If the line or sensor was leaking, you would have lost fluid, at least more than you mentioned. When the engine is running and the clutch is depressed, see if it will go into gear. If the clutch isn't engaged, either it won't go or it will grind. I need to know if it is releasing or not. Also, if it easily goes into gear, slowly pull up on the clutch pedal with your foot to see if the car moves.
I attached a pic below. I highlighted the release bearing and release fork. If the car sat for a long period of time, something may be rusted or even broken. These are the next things to check if we can't get a pedal.
Also, let me know how you are bleeding the system. You need a helper to do it. The helper should pump the clutch pedal a few times, hold it to the floor, then you should open the bleeder on the slave, and the pedal should not be released until you retighten the bleeder.
