A thermistor is a temperature-variable resistor like in a coolant temperature sensor. You have a plain old variable resistor hooked to a float in the gas tank. On some cars it's clipped to the fuel pump assembly and can be easily replaced and often repaired. The float arm can be popped off by lifting a little locking finger, then the weak contact can be bent slightly to make better contact.

On some cars the sending unit is separate from the fuel pump assembly but it can often be repaired the same way.

If you're referring to the fuel gauge sending unit, I don't know what its value is, but mainly you're looking for an open circuit. It isn't going to change value, so it's either okay or open. A typical value would be anywhere from ten to 500 ohms. These are usually dealer-only items because the failure rate is so low. For older cars you'll usually have to find one in a salvage yard.
