I was told that I have a full floating rearend. Can I effectively change my brakes without pulling the axel on both sides and what parts besides the brake shoes am I going to have to replace in the process?

Resurface or replace the rear drums if they don't meet minimum measurement. I would replace the brake hardware (springs and clips) while you're at it.

You do not need to remove the axles.
