I had motor replaced 3 yrs ago with new jasper motor because motor went bad due to bad oil pump/sending unit cant remember which. Its been running great and always reliable since replacement was done. Just added few quarts of oil last week and right after I had fluctuations in oil pressure from 40-60psi. Today on ride home oil pressure fluctuated between 20-40psi and I had a rather hard time maintaining speed on cruise control it wanted to keep hitting 3000rpm to maintain speed and I had hard time getting past 70mph. I have no oil leaks and ive always had steady 60psi oil pressure for 3yrs since motor replacement. PLEASE HELP ASAP THANKS! O there is also a burning oil smell that happens rarely

Added a few quarts? How many? Did the motor start making noise?

Start with a manual check of oil pressure to verify if it is low.

It also sounds like you have other driveability issues but start here
