what happens if i put five twenty weight oil when it calls for five thirty weight oil

the only difference between the oils are the thickness.

You should be fine. If you refer to the owner's manual, it provides acceptable oil weights for different temperatures. If you live in where it is very hot, I would go back to the recommended weight.
