Engine cooling

I have a chevy 1994 p/u 1500 2 wl dr 4.3Ltr auto.
I put a brand new water pump, radiator, thermostat 195, I flushed out the system best I
could. When I drive it the temp rises to almost 200
then works its way up to the red zone and ten
goes back and forth from 160 to260 to 200 but never seems to stay in one spot for long. Can you
help

This usually indicates a part blocked radiator, faulty thermostat or faulty cooling fans, re check the thermostat as faulty new ones are no that uncommon.
