Car has been overheating in 20 degree weather after about 5 miles of driving even after refilling coolant tank, the oil checks out, no bubbles or anything, no leaks, with the exception of when it gets really hot of course.

After refilling the tank? You have a leak. It may be buring it now from a head gasket from the overheating

have a leak down test done to confirm a head gasket

Well after refilling to coolant tank, and then after driving it the level of the coolant didnt change at all after a few days of driving. In fact today it is still filled, unchanged.

Are the cooling fans working?
Did you check the level inside radiator?
