Where do I find the "valve" to top up the gearbox in my 93 mazda 323 astina gt. Is this done by undoing the speedo cable etc?

Yes, you need to remove the speedometer drive gear to top up transmission gear oil. There should be an embossed diagram on top of the transaxle and can be easily seen if the area is clean.
