If it goes up and down with the rpms that is not uncommon. You should double check oil pressure gage. You may be able to use analog gage in place of sending unit in the engine, to see if both the dash gage and analog gage react the same.
Does the vehicle use any oil?

The oil pressure spec I found for your vehicle says 40--60 psi @ 2000rpms.
I did find generic specs, does not relate to a particular vehicle or engine, 20--30psi at idle, 40--60psi at cruising speed. With your mileage, not sure you can come close?
