1993 Chevrolet Silverado rebuilding TBI injection

I was wondering if it's a good idea to replace the 2 injectors in the throttle body when doing an overhaul on it, just because of the age of the truck?

It's not a bad idea. Since there's no way of predicting when an injector may go bad, this may spare you from having to deal with it later.

Ok thanks, I got one more question if you don't mind. I heard that it might be a good idea to put in an adjustable fuel pressure regulator because the factory one has the leeway of 9-13 PSI and they say it should be 13 PSI, what's your thoughts on that?

That's not a bad idea, but keep in mind that the factory one adjusts itself according to engine vacuum.
At times of low vacuum (under load, accelerating, etc.) fuel pressure increases, providing a rich mixture [for more power].
At times of high vacuum (cruising) fuel pressure decreases, providing a modest amount of fuel
to increase fuel mileage.

I've seen the adjustable types work well in daily use vehicles but there was no distinct advantage over the factory type.
