The Ac on my '92 Saturn is locking up and throws the serpentine belt. Do I need to replace the compressor?

If your a/c compressor is locking up then yes you would have to replace the compressor and drier to get it working again. If you have a S model and not a L100 since they didn't make a L100 in 1992 then if you wanted to bypass the a/c compressor then you can just get a belt without a/c.
