The power Steering system in our car is leaking in the Rack and Pinion and pump so both need to be replaced. Should we replace all the hoses as well? If so, how many are there.

It's very unusual for two things to leak at the same time. There are two hoses, the high pressure hose that sends pressurized fluid to the rack assembly and the low pressure hose that takes it back to the reservoir. There's no harm in replacing the hoses, in fact, the nuts on them might be rusted tight. There shouldn't be much extra labor involved in replacing them since they will already be disconnected.
