91 Plymouth voyager temp gauge maxed out. Disconnected wire still maxed out any thoughts?

Did you disconnect the single-wire sensor with a purple wire or the two-wire sensor? The single one is for the gauge. Measure the voltage at the connector when the ignition switch is turned on. If you find 0 volts, that wire is shorted to ground somewhere.
