What is the proper engine operating temperature for 1991 300SE.
Mine operates at 80C which seems cool as far as inside heater output goes. Can I get a thermostat for hotter operation ?

It is operating correctly. Sometimes the heaters do not put out very hot air as the engine is mostly aluminum and cools quickly. You can get a hotter thermostat, but only go a few degrees or the next step. Don't run it hotter than that, it will give the performance and fuel economy problems.
