what would cause oil and water to go into carburetor?

just changed head gasket, control throttle sensor

Are you sure it has a carb? It should be fuel injected.

it has a throttle body

That is what I thought. The system is sealed from one end to the other. Is the oil coming from the intake? Have you checked for a bad intake gasket?
