I have replaced the throttle position sensor and the idle air control valve. Could it be the water temp sensor?

The temp sensor tells the computer how to adjust air / fuel mixture. It could, but it is unlikely. Have you checked for vacuum leaks? If not, I recommend it.

Yes, all vacuum lines have been replaced! Thought that prior to replacing the idle air control valve. Seems to do it more after it has been running for an hour or more.
