1990 Firebird V6 engine temp

What is the eng temp to be at normal operating speed, after warm up. And recomended thermostat temp?

It has a 195 thermostat and it will usually maintain that when cruising but in slow traffic situations it may run hotter because the electric fan is programmed to come on higher temp than that.

Would a lower temp cause it to run bad such as idle rough. My car runs at normal temp about 160 if it sits and idles for more than 5 min in traffic the temp will rise to almost 200 and the fan will kick on. But if the temp is to low at normal driving would that make it run rich and idle a little rough?

Yes, it is possible although I don't know if that is the case with yours or not. Many GMs will go into open loop when the temp drops below a specific threshhold.

I will change the thermostat to a 195 and go from there. Thanks for the info.
