I own a Mercedes-Benz 300 E Model 1989. The engine oil light goes on at times, yet I have checked the dipstick and the oil seems full and in good shape. What is the problem? And is it serious?

The oil warning light refers to oil pressure, not level. You didn't list the mileage or any other history so anything is a guess. At high mileages, bearing wear inside the engine leads to low oil pressure. Oil with a viscosity that's too thin will do that too. You also could have nothing more than a defective oil pressure sending unit. Your mechanic can identify that by checking the actual pressure with a mechanical gauge.
