1989 Gmc S15 Truck 4 3l V6 That Temperature Gauge Will Spike Overheating

My truck has the 4.3L V6. The issue is that the temperature gauge will spike as if the truck is overheating. After the spike, it will return to normal operating temperature, but will consistently flutter between normal temperature and 210 deg which is the midpoint on the temperature gauge. What could be causing this issue?

Might be an issue with temp gage sending unit?
