You have to get a rebuild kit, usually they have instructions inside the kit.

There are hundreds of parts for different holly carbs. I'll need to know the exact model to help you.

Also, if you contact Holly directly, you'll be able to obtain a complete diagram of your carb, as well as a complete list of parts available from them for a rebuild.
