hello, I have to constantly top up the radiator water bottle, every day actually. I was told the thermostat housing / gasket needs replacing, not quite sure what he said exactly, can you tell me what the problem might be and how much usually for parts and labour do you charge? thanks

The first thing to do is get a coolant pressure check done. Most automotive stores will do a compression check, This will tell if there are other problems. If you are filling it once a day do you see any fluid on the ground after you run it and it sits? If it's leaking by the thermastat most times it is the hose. The thermastat will run about 5.00 and the housing around 7.00 and up.
