Gas is in my oil on a 1988 chevrolet celebrity2.8 engine why?

Depends where it's coming from and how much there is. GM has quite a bit of trouble with leaking fuel pressure regulators but that seems to be more of a truck thing. Pop the vacuum hose off the regulator and look inside. If there's any liquid fuel in there, replace the regulator. You should see black smoke from the exhaust and the engine will not run very well.

Engines with multiple injectors can have one that leaks after the engine is shut off. You won't notice that in the engine performance and it will take a while to show up in the oil. The stored fuel pressure will bleed down very quickly so only a little fuel will dribble into the intake manifold each time you stop the engine. It will have to run into the cylinder and down past the piston rings.

A vacuum leak will cause unburned oxygen to be detected by the oxygen sensor. That will tell the Engine Computer to add more fuel. A coolant temperature sensor or intake air temperature sensor will also tell the computer to add too much fuel. The engine should not be running properly when too much fuel enters the engine while it's running.
