I changed the oil pump on my 1987 s10 pickup and my oil light is still on and it still is knocking

Knocking while running is a sign of excessive clearance in the bearings. Excessive clearance prevents oil pressure from building up because the oil runs out through the bearings too quickly. A new pump won't build pressure any faster. It's the bearings and crank shaft you have to look at.
