why is my truck over heating?

It onlu does it every once in a while like it will be cool get to running temp and stuff then suddenly just shoot up and then i pull over turn my truck off let it sit for like five mins start it up its still really hot but cools right down and ive put a new thermostat in but it didnt fix it maybe the water pump?

check y oru radiator for cool spots, if there are any cool spots then your radiator is bad. it should be same temp all over. if fins are loose and corroded then that is another tip off.
