1978 Pontiac Trans M Restoring 2 Ta S Want Place Cover Over Already Broken

I'm restoring 2 TA's, and I don't want to place a cover over the already broken dash cover. Can I tear the old one off and recover the under dash or is there another way. The '79 is a SE and I want to make it a show car. Both dashes are crumbling and hiding it is not an answer. Mike

This is really a question for a motor trimmer, i would go find a good trim shop and get their advice on this problem.
