Would needing an oil change and a valve adjustment make an engine stall constantly? It seems to be losing power.

The valve adjust is possible, but not likely. Most likely a problem with the carb/carbs. Might also want to be sure the points are in good shape

Point's are about #1. Use only Bosch points and they have to be gapped quite precisely.
These cars DO need regular valve adjustments. Every 6000 miles, I think.
One of the old time driveability problems that gets overlooked is that the exhaust transfer pipe in the intake manifold gets blocked with carbon. That long intake manifold needs to be HOT. Also make sure you have the preheat hose from the engine tin to the air cleaner hooked up. If you don't have the stock exhaust and air cleaner, none of this applies, of course. (But don't expect it to work right, either.)
