I just replaced the back brakes with Dic brakes and now when I drive it for an hr or two they start to lock up, so I have to bleed them

What it sounds like is that the brakes are not releasing enough to cool off. It could be a pinch in the line, a blocked line or the master cylinder. They do have master cylinders for vw's that have been converted from drum brakes to disc.
