My manual calls for a double ground plug. What happens if I use a single ground?

The 1ZZFE engine should ask for a NGK or Denso iridium.
In any case, follow the owners manual for plug type, do not put cheap plugs in this engine.
Put a dab of antisieze on the threads of each plug before installation, do not overtorque.
