Most of the time people ignore changing the power steering fluid unless there is a problem. There are two methods to changing it. One involves flushing the system, the other uses a pump or vacuum device to draw out as much fluid as possible from the reservoir and refilling it there. Both methods have their virtues.
The first changes all the fluid, but depending on the vehicles design it can be difficult because most systems do not have drains. Instead you remove the steering return line and cap it on the pump side, remove the fill cap and then let the fluid get pumped out while adding new fluid at the fill opening. This can be very easy if the return line is out in the open, or difficult if it is hidden in the engine bay like many are.
The owners manual and possibly the cap or reservoir will specify the correct fluid to use. Due to differences in models and years and build locations it could be a generic type power steering fluid, transmission fluid or a specialty fluid. You need to match what is in there to prevent damage.
