Pumping the system into a vacuum is done to remove any moisture from the system. In a vacuum, water boils at 77 degrees Fahrenheit. It gets pulled out as a vapor. Any refrigerant has been long gone by that time. It boils somewhere, as I recall, at around minus 70 degrees. The oil doesn't vaporize so it just sits in the system during the entire process.
