1998 Mercury Sable low coolant light stays on

The low coolant light stays on all the time. Is there a switch in the reservoir that should be replaced? Can I just unplug the cable to the sensor switch and leave it off? Will this do any harm? I always check all the fluids under the hood anyway.

That's sensor is a minor repair and shouldn't cost much to replace. It's in the reserve tank. I wouldn't drive it without one as you could end up with engine damage and not see it coming.
