Vehicle was running a little warm (it's been 100 degrees here). I was at stoplight and check gauges light beeps on. Oil pressure goes almost to zero. Truck continues running and doesn't make any noises. When I took off, the oil pressure went back to normal and never did it again. Truck was 1quart low on oil when I got home.

Based on your description, it sounds like the oil sending unit may be bad. It isn't an expensive part, easy to replace, and is located near the oil filter. If this continues to happen (as long as there is no knocking or ticking in the engine), I would replace it. Chances are if you look at it, there will be oil on it from leaking.
