Is it safe to remove the thermostat

Two days ago I changed the hoses of the radiator, I do not know much of mechanics is my first car.
The next day the temperature of the car went up too much and turned off the car. I called a trusted mechanic. The first thing he did was to check if the thermostat was blocked, but the car "did not have". I went to buy some things so that he finished work and take advantage to buy the original thermostat. When I went to take the materials he told me that the thermostat was not necessary, the problem was "air in the engine".
My car stays a little less than half "parked" and "in the middle" running.
However, now I do not know what to do with the thermostat. My question is: Is there no problem?

I want to emphasize that I live in Panama and the average temperature is 27 degrees C, 80.6 F.

Hello,

The car needs a thermostat because it will slow down the coolant through the radiator which is what you want. But if there is air in the system due to a blown head gasket the car will over heat no matter what.

Today the car turns on and works normal and the temperature stays in the middle.

The engine package was changed a few months ago because it had broken and had oil in the radiator, I already had that experience.
The radiator has no oil, so I think the packaging is fine.

New: After using the car for 30 minutes, the radiator hoses shake and boil, but the temperature is in the middle and the fan also works.

What else should I check?
