Do you have to keep coolant in the resevoir tank? If so, could you please explain why and what it does?

Yes you do.

With the vast temperature changes in the cooling system, the fluid will expand and contract. When the fluid contracts and there is no fluid left in the resevoir then the radiator will be low on coolant and it might over-heat.
