Replaced shocks with struts is there an adjustment to soften ride or just to lower or raise the car?

There is neither. The shock/strut is what it is out of the box and nothing can be changed. You should have researched which brand of shock would have been best for you before purchasing them.

The shock contributes a lot to what type of ride you get but has nothing to do with height. The only connection shocks/struts have to height is if you run a car too long with worn out shocks, it will abuse the springs and cause the car to sag. New shocks.struts will not correct that.
