Overheating

My 1997 ford f-150 115,225 6.2 l v6 my truck will run fine for awhile but the water gauge will spike to hot if I rev my engine it will go back down to normal and stay that way for awhile just lately it will blow hot air when running on the highway but when I slow down it gets cold in warmer weather it always blew hot now thats it colder it goes hot and cold

The rise in temperature then dropping to mormal sounds like themastat is sticking. Check your belts
to make sure they are not loose, since you have heat at times it does not sound like its vapor locked.
Make sure fluid level is up.
