My truck has been overheating, there is plenty of coolant and oil and they have all been recently replaced. I will be driving along just fine then 30-40 miles down the road all of the sudden it goes from normal to hot, what is causing this jump so long after I started the engine.

Probably a sticking thermostat. Try changing it.
