Sound like a stuck thermostat. They are little temperature Spring Controlled devices that can easily go bad. When they get warm and pressure applied they open up and let coolant flow. If it is sticking closed your car overheats. Once it cools down, pressure is removed, you start again and the next time the Thermostat opens like it should.
