Ryan, take a look at the battery terminals and the connections to the battery leads. I have had a similar problem on two seperate GM trucks, an excess of corrosion build up caused the truck to fail to start at times but more often start, then die. In both cases removing the terminals and cleaning everything with a mix of baking soda and water as well as a file and wire brush to remove stubbron corrosion did the trick. Not sure if it will work for you but I would give it a shot since its an easy, and more importantly free, fix. If this doesn't do it have your battery tested as the next free check. It obviously sounds like an electrical thing though, good luck.
