2005 Chevy Silverado replacing interior

I purchased a recovered theft/abandonment truck whose interior was ruined with moisture. The roof liner, dashboard and door panels are ok but the back panel, floor liner, all seats (ext. cab) and center console are gone. I would like to tackle this myself and I could use all the guidance I can get. It has been very difficult even to acquire used parts from a credible source. Any help would be appreciated. If you are replacing the seats, it isn't a difficult job. Basically, they just bolt to the floor.

I need to first replace the rear liner and the floor liner and all respective weather stripping and any moulding/trim. Is this something that can be done by average person. If so, do you have any suggestions as to where to get this stuff. Is the dealer the place to go? Any help would be greatly appreciated. Thank you in advance.
