This sounds like one of two main issues. First is a fuel pump issue. Next is a crank sensor issue.
The fuel pump may be weak and have to cool down in order to supply enough pressure. So we need to start with checking fuel pressure when this happens.

Next the crank sensor on this vehicle is part of the distributor and I have seen a number of these fail like this and basically just putting a distributor in them fixes it. Here is a guide that talks about this even though your sensor is slightly different:

When this stalls and does not restart, we need to pull a plug and find out if you have spark. If you don't I would replace the distributor and retest.
