My 2000 Chevy Malibu jerks, bucks slightly on the steady uphill run,
goes away if I accelerate hard, what could be a problem?

I would start by looking at the spark plugs and the wires. Make sure and check the wires at the coil towers aswell.

I dought that it wil be a mass air flow problem. You can try and clean it and see if it helps. When the car is doing it place your left foot on the brake pedal slightly so that the torque converter disengauges and see if it stll does it. I have seen torque converter solenoids cause a surging condition.
What motor is in it?

Looks like the cleaning of the MAF filter did the trick!
It works smooth for now.
