When it overheats, do you see coolant has poured out of the overflow cap?
Are there any particular times that it overheats more than others?
Have you had the car checked at a garage?
Have you tried replacing your radiator cap?
With those aside, when the temperature sensor reads the optimal temperature (somewhere around 197 or so), it sends a signal to the computer, which turns the fan on for 30 seconds.
Have you been going faster than 70 mph when it overheats? Because, I think I read something along the way that if you're traveling in excess of 70, the fan does not engage. I'm probably wrong on that, but anyway.
If your cooling system checks out okay - your water pump, fan(s), temp sensor, radiator, hoses, heater core, thermostat, and radiator cap, then your computer may not be controlling the fan properly.
I would also check for a weak hose. Sometimes, a hose can become hot and weaken to the point that it collapses while the engine is under load. If any of them feel suspiciously soft, I'd give it a changing.
